New Delhi: Holy Week Is here and the countdown has begun to celebrate the auspicious festival. Legend has it that the festival was celebrated with colors, forgetting social differences and having good food.

1. Gujia: This is a signature Holi dish, also known as karanji. These are deep-fried dumplings made with maida, or suji with a filling of meva, crushed dried fruit, jaggery and goya. This appetizing food is enough to satisfy your taste buds with a hot cup of masala chai (tea).

2. Puran poly: A true Holi dessert, Puran Poly is a sweet butter-like flatbread made with jaggery, coconut, cardamom and sana lentils with butter or ghee. When you return home after playing Holi, the heavenly bite of this hot delicacy is enough to satisfy your hunger.

3. Pang (hemp) lattes: This is one of the most loved and popular dishes of Holi. To make this at home, heat ghee in a pan and add sugar to the dough. Stir the mixture constantly until the sugar is completely dissolved. Add almonds, cashews and pistachios to the mixture and add hemp powder (not too much as it is too addictive) to cure. When the mixture is completely cooled, prepare the laddu in the form of balls. Put them in the fridge for two or three hours and then enjoy them.

4. Father: Dandai Holi is one of the most popular dishes made from whole milk, sugar, almonds, black pepper, fennel seeds and small saffron. This cold milk drink is made with a mixture of almonds, fennel, watermelon kernels, rose petals, pepper, poppy seeds, cardamom, saffron and sugar. You can make it in different flavors like coffee, rose, vanilla or chocolate.

To prepare this dish, first, fry all the spices in a bowl. After that, soak them in water for about two hours. Grind and paste in a mixer. Then add whole cream milk. Pour the liquid into a muslin cloth and strain it. Garnish with rose leaves and serve.

5. Ross evening: Rose Hill, one of the most delicious desserts to treat during the Holi festival, is made by soaking fluffy senna balls in rabri milk mixture. To make this, pour the milk into a thick pan and heat over medium heat.

When it comes to a boil reduce the heat and add the saffron fibers. Stir it for about 15 minutes. Mix 1 teaspoon of cornflour with 1 tablespoon of water and stir to prevent lumps.

Add 3 tablespoons sugar, corn flour-water mixture and 1/4 teaspoon cardamom powder. Cook until sugar is dissolved. Add the senna balls and chopped dried fruit and cook for 4-5 minutes over medium heat so that the senna absorbs the milk and gets the taste.

Turn off the heat and cool to room temperature. Keep in the refrigerator for at least 2-3 hours. Garnish the dish with rose petals or saffron fibers and serve chilled.
